INGREDIENTS

  • 1 lb. ground beef
  • 1 tsp. chili powder
  • 1/2 tsp. ground paprika
  • 1/2 tsp. ground cumin
  • Kosher salt
  • Freshly ground black pepper
  • 8 large flour tortillas
  • 1/2 c. nacho cheese sauce
  • 4 tostada shells
  • 1 c. sour cream
  • 2 c. shredded lettuce
  • 1 c. chopped tomatoes
  • 1 c. shredded cheddar
  • 1 c. shredded Monterey Jack
  • 1 tbsp. vegetable oil

INSTRUCTIONS

  1. In a large nonstick skillet over medium heat, combine ground beef and spices and season with salt and pepper. Cook, breaking up meat with a wooden spoon, until no longer pink, about 6 minutes. Drain fat and wipe skillet clean.
  2. Stack 4 large flour tortillas and place a tostada shell in the center. Using a paring knife, trace around edges of shell to cut 4 smaller flour tortilla rounds.
  3. Build Crunchwraps: Add a scoop of ground beef to the center of remaining 4 large flour tortillas, leaving a generous border for folding. Drizzle cheese sauce over each, then place a tostada shell on top. Spread sour cream over each shell, then top with lettuce, tomato, and cheeses. Place smaller flour tortilla cutouts on top and tightly fold edges of large tortilla toward the center, creating pleats. Quickly invert Crunchwraps so pleats are on the bottom and they stay together.
  4. In the same skillet over medium heat, heat oil. Add Crunchwrap seam-side down and cook until tortilla is golden, 3 minutes per side. Repeat with remaining Crunchwraps.

INGREDIENTS

  • 1 - 32 oz. bag of hash browns or may substitute fresh diced potatoes
  • 14 oz. kielbasa cut into small pieces
  • 1 small onion diced
  • 2 1/2 cups shredded cheddar cheese
  • 10.5 oz can cream of chicken or mushroom soup
  • 1 cup milk
  • salt and pepper to taste

INSTRUCTIONS

  1. Combine hash browns, kielbasa, onion, and 2 cups of the cheese in a greased slow cooker.
  2. In a separate bowl, combine cream of chicken, milk, salt and pepper.
  3. Pour over hash brown mix.
  4. Sprinkle remaining cheese over top.
  5. Cook on low for 6 hours or on high for 3-4 hours. It is done when your potatoes and onions have cooked through. Be careful not to overcook the potatoes. Enjoy!

NOTES

  • If you substitute fresh diced potatoes for the frozen, you will probably need to add to the cooking time. 
  • The dish is done once your potatoes and onions are cooked.

INGREDIENTS

  • 1 (1lb) box medium pasta shells
  • 1lb ground beef
  • 2 (10oz) cans tomato soup
  • 2 cups shredded cheddar
  • 1 cup shredded mozzarella
  • 1/2 cup water
  • garlilc, salt & pepper to taste

INSTRUCTIONS

  1. Cook and drain the pasta according to the package directions.
  2. Meanwhile, preheat your oven to 375 degrees and grease and 9x13 baking dish.
  3. In a large skillet, brown and chop the ground beef with garlic powder, salt and pepper (or any seasoning of your choice).
  4. Add the cooked pasta, tomato soup, a half cup of water and HALF of the cheese to your skillet with the browned beef; stir and cook for 2-3 minutes over medium heat.
  5. Pour the mixture into your greased dish and top with the remaining cheese.
  6. Cover with foil and bake for 20 minutes. Uncover and continue baking for an additional 10 minutes (I also like to turn the broiler on for the last 2-3 minutes to brown the cheese).
  7. Serve immediately and store any leftovers in the fridge for up to 3 days.

NOTES

  • You don't have to use mozzarella for this dish if you'd rather use 100% cheddar instead. Your preference! I like the mozzarella because it makes the cheese stringy.
  • You can also add a diced onion or onion powder to the beef mixture. My family doesn't care much for onion, so I leave it out.

Honey Sauce
  • 1/2 cup Honey
  • 2 tablespoons low sodium soy sauce
  • 2 tablespoons water
  • 1/4 teaspoon sesame oil
  • 1 tablespoon apple cider vinegar or rice wine vinegar
  • pinch of red pepper flakes (optional)
  • 1 tablespoon cornstarch
  • 1 tablespoon water
Chicken
  • 3 large chicken breasts (about 1 1/2 lbs, cut into large bite-sized pieces)
  • 1 1/2 cups flour
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon coriander
  • 1/2 teaspoon onion powder
  • 1 1/2 cups buttermilk
  • canola oil or vegetable oil (about 2"-3" of oil in a skillet pan with sides)

  1. Pour about 2"-3" of canola or vegetable oil into a large frying pan with high sides. Turn the burner to medium-high heat and let the oil get hot while you prepare the sauce and other ingredients.
Make the Honey Sauce
  1. In a saucepan over medium heat, add the honey, soy sauce, water, sesame oil, red pepper flakes (if using) and vinegar. Whisk together and bring to a boil.
  2. In a separate bowl stir together the cornstarch and water. Set aside. Once the sauce is boiling slowly add the cornstarch mixture, while whisking. Bring back to a boil and then turn the heat down to low and let simmer for 10 minutes.
  3. ** If the sauce seems to be getting too thick (while you're frying the chicken) then add water, a tablespoon at a time, to thin it out. You don't want the sauce too thin as it is supposed to be a thicker sauce.
  4. ** The sauce is just fine simmering on the stove top while you're frying the chicken batches.
Crispy Chicken
  1. Add flour, chili powder, cumin, coriander, and onion powder into a bowl. Stir with a fork to combine. In a sperate bowl, add the buttermilk.
  2. Two pieces of chicken at a time, once in each hand (fingers), dip the chicken in the flour, then into the buttermilk and then back into the flour. Place the coated chicken in the hot oil and cook for about 5-7 minutes, turning the chicken as needed. The chicken needs to be cooked through and up to temperature, 165 degrees.
  3. Place the cooked chicken on a paper towel lined plate.
  4. Continue cooking the remaining chicken in batches until done.
  5. Combine all the cooked chicken into a large mixing bowl. Pour the hot honey sauce over and gently mix together until all chicken pieces are coated.
  6. Serve with cooked rice and sliced green onions.

NOTES

  • I find the sauce too sweet when I double it. 
  • If you want more sauce then you can try doing 1 1/2 times the sauce recipe. 
  • Again, I find it too sweet and I think the sauce as is, is perfect for the juicy crispy chicken. 
  • But double it or 1 1/2 times it, depending on your preference if you want some additional sauce to drizzle over the chicken & rice.

  • 1 tablespoon olive oil
  • 1 pound chicken breasts
  • 1 pound smoked sausage sliced into 1 inch pieces
  • 3 cups of heavy cream
  • 4 cups of low sodium chicken broth
  • 4 tablespoons butter
  • 2 tablespoons coarse cajun seasoning
  • 2 cloves garlic smashed
  • 1 pound of uncooked penne pasta
  • 1/2 cup hot water
  • 5 oz freshly shredded parmesan cheese
  • kosher salt and black pepper
  • garlic powder

INSTRUCTIONS

  1. Pat chicken breasts dry and season with salt, pepper and a sprinkle of garlic powder. Heat olive oil over high heat and quickly sear chicken breasts on both sides.
  2. Add chicken breasts,sausage, heavy cream, chicken broth, butter, garlic cloves and 1/2 teaspoon of kosher salt, cajun seasoning and several turns of freshly ground black pepper to slow cooker.
  3. Cook on low for about 4 hours or high for 2-3 hours, until chicken has reached 165 degrees.
  4. Remove chicken from slow cooker and set aside to cool and slice.
  5. Stir in 1/2 cup of hot water and uncooked penne pasta, cover and cook on high for about 30 minutes. Just until pasta is tender.
  6. Once pasta is tender, stir in parmesan cheese, sliced chicken and additional salt and black pepper to taste.

INGREDIENTS

  • 1 pkg. pork tenderloins, trimmed (comes with 2 pieces, 2 – 2 1/2 lbs. total)
  • 1/4 cup kosher salt
  • 4 cups warm water
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons brown sugar
  • 1 cup ice cubes
  • 2 tablespoons lemon juice
  • 3 tablespoons butter sliced into 6 pads
Spice Mix
  • 1 TBS EACH chili powder, garlic powder
  • 1 tsp EACH salt, onion powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon pepper
HERBS TO ADD LATER:
  • 1/2 tsp EACH 
  • Dried parsley, dried basil, dried oregano, dried thyme

INSTRUCTIONS

  1. Preheat oven to 400 degrees F. Lay two long pieces of foil on a baking sheet – these will be used to fold up each tenderloin separately.
  2. In a gallon-size freezer bag, mix salt with warm water until dissolved. Whisk in apple cider vinegar, brown sugar and ice, followed by pork. Brine for exactly 20 minutes then remove pork from brine, RINSE and and pat very dry. The pork becomes mealy if left in the brine any longer.
  3. Whisk together all of the Spice Mix ingredients (not the "Add Later Herbs") in a small bowl. Evenly rub pork all over with spice mix.
  4. Heat 2 tablespoons vegetable oil in a large skillet over medium high heat. When oil is very hot and just smoking, add pork tenderloins, you may need to work in batches. Sear each side of pork until golden, then transfer to foil.
  5. Evenly sprinkle tops of pork tenderloins with remaining herbs (parsley, basil, oregano, thyme) then rub into pork. Evenly drizzle each pork tenderloin with one tablespoon of lemon juice (2 tablespoons total), then top each tenderloin with 3 pads of butter. Bring up the sides of the foil to completely enclose each tenderloin (see photos in post).
  6. Bake at 400 degrees F until pork registers between 145- and 150-degrees F (63 and 65 degrees C) at the thickest part of the tenderloin, 15-25 minutes depending on thickness. This means the pork will be juicy and slightly pink in the middle. To check the temperature, carefully unwrap the foil, then wrap it back up if it need to continue baking.
  7. When pork is done, loosen foil (so steam can escape) and let stand 5-10 minutes before slicing. Season with additional salt and pepper to taste (I like additional salt) and serve with accumulated butter sauce in the bottom of the foil.

  • 2 cups cooked chicken diced
  • 2 (10 ounce) cans cream of chicken soup undiluted

  • 1 cup sour cream
  • 2 cups Mexican cheese blend divided

INSTRUCTIONS

  1. Preheat oven to 350 degrees.
  2. Cook pasta according to package directions; drain.
  3. Mix together cooked pasta, diced chicken, cream of chicken soup, salsa, sour cream, taco seasoning, and 1 ½ cup of your cheese. Stir to combine.
  4. Pour into a 9x13 sprayed baking dish.

INGREDIENTS

  • 4-6 chicken breasts (2-3 pounds)
  • 1 (12oz) bottle BBQ sauce
  • 3/4 cup italian dressing
  • 1/4 cup brown sugar
  • 2 tbsp Worcestershire sauce
  • sandwich buns
  • coleslaw (I buy the prepackaged stuff)

INSTRUCTIONS

  1. Place everthing into your slow cooker (except for the sandwich buns and coleslaw) and cook on LOW for 6-8 hours or until the chicken shreds very easily.
  2. Shred the chicken and mix around in the sauce. Allow it to absorb the sauce for an additional 15+ minutes.
  3. Serve on toasted buns with coleslaw.

INGREDIENTS

  • 6 strips bacon cut into small pieces
  • 2 large chicken breasts cut in half lengthwise
  • Flour for dredging
  • 1/4 teaspoon garlic powder
  • Pepper to taste
  • 1/2 cup chicken broth
  • 1/2 teaspoon lemon juice
  • 1 tablespoon butter
  • 1 cup heavy/whipping cream

INSTRUCTIONS

  1. Cut the bacon up and add it to a skillet (I use kitchen shears to make this job quick). Fry it over medium-high heat until crispy (about 10 mins). Once the bacon is done, take it out of the pan and set it aside. Leave about 2 tablespoons of the bacon fat in the pan.
  2. Meanwhile, prep your chicken (cut it in half lengthwise so you have 4 smaller cutlets). Sprinkle them with the garlic powder and pepper and then coat them in the flour. 
  3. Add the chicken to the skillet and cook it in the remaining bacon fat over medium-high heat for 4-5 minutes/side or until it's golden. If it starts to splatter a lot, reduce the heat. Once the chicken is browned, take it out of the pan and set it aside.
  4. Add the chicken broth, lemon juice, and butter to the pan. Let it bubble until it's reduced by half (about 3-4 minutes).
  5. Stir in the cream and once it starts to bubble, add the chicken and bacon back into the pan. Cook for another 5 minutes or so until the chicken is fully cooked through and the sauce has reduced to your liking.

NOTES

  • I used my 10-1/4" Lodge cast iron skillet to make this recipe. 
  • Any skillet would work, though!
  • I suggest using fairly large boneless/skinless chicken breasts for this recipe since we're cutting them in half lengthwise. 
  • If you have smaller chicken breasts, use 4 of them and leave them intact.

INGREDIENTS

  • 1 pound lean ground beef
  • 1 cup chunky salsa
  • 1 (10-ounce) can red enchilada sauce
  • 8 (8-inch) tortillas (We much prefer flour, but corn are more traditional.)
  • 1 (8-ounce) package Borden® Cheese Thick Cut Shredded Four Cheese Mexican (about 2 cups)

INSTRUCTIONS

  1. Preheat the oven to 350°F and lightly spray a 9x13-inch baking dish with nonstick cooking spray.
  2. In a large skillet, brown the ground beef over medium-high heat. Drain the excess fat away and return the meat to the skillet and to medium-low heat. Stir in the salsa and cook until heated through. Remove from the heat.
  3. Pour about 1/2 of the enchilada sauce in the bottom of the prepared baking dish.
  4. Warm the tortillas according to the package directions. Add about 1/4 cup of the meat mixture down the center of each tortilla and top with about 1 heaping tablespoon of cheese. Tightly roll each tortilla up and place them in the dish, seam side down. Pour the remaining enchilada sauce over them and sprinkle the remaining cheese over.
  5. Tightly wrap the dish with aluminum foil and bake for 30 to 35 minutes.

INGREDIENTS

  • 1 (24oz) bag of frozen cheese ravioli
  • 1 (24oz) jar of marinara
  • 2 cups shredded mozzarella (heaping)
  • 1/2 cup shredded parmesan (optional)

INSTRUCTIONS

  1. Preheat your oven to 400 degrees and grease a 9x13 baking dish.
  2. Spread a thin layer of your marinara sauce onto the bottom of the pan (about 3/4 cup). 
  3. Arrange half of the frozen ravioli in a single layer over the sauce (should be about 12 of them).
  4. Top with half of the remaining sauce and half of the mozzarella. 
  5. Repeat the layers starting with what's left of the ravioli. Finish by topping with the remaining sauce and cheese. Sprinkle with parmesan if you'd like.
  6. Cover the baking dish with aluminum foil, and bake for 30 minutes. Remove the foil, and continue baking for an additional 15 minutes, or until the cheese starts to brown. 
  7. Serve with veggies, salad, garlic bread or anything else you'd like!

NOTES

  • Don't be afraid to experiment! You can also add ground beef, sausage, spinach or veggies to your layers.

INGREDIENTS

  • 6 strips (uncooked) bacon cut into small pieces
  • 3 Tablespoons butter unsalted or salted will work
  • 1 medium yellow onion chopped (about 1.5 cup/200g)
  • 3 large garlic cloves minced
  • ⅓ cup all-purpose flour 42g
  • 2 ½ lbs gold potatoes peeled and diced into pieces no larger than 1” (this was about 6 Large potatoes for me/1.15kg)
  • 4 cups chicken broth 945ml
  • 2 cups milk 475ml
  • 2/3 cup heavy cream 155ml
  • 1 ½ teaspoon* salt
  • 1 teaspoon ground pepper
  • 1/4 - 1/2 teaspoon ancho chili powder**
  • 2/3 cup sour cream 160g
  • Shredded cheddar cheese, chives, and additional sour cream and bacon for topping optional

INSTRUCTIONS

  1. Place bacon pieces in a large Dutch Oven or soup pot over medium heat and cook until bacon is crisp and browned.
  2. Remove bacon pieces and set aside, leaving the fat in the pot.
  3. Add butter and chopped onion and cook over medium heat until onions are tender (3-5 minutes).
  4. Add garlic and cook until fragrant (about 30 seconds).
  5. Sprinkle the flour over the ingredients in the pot and stir until smooth (use whisk if needed).
  6. Add diced potatoes to the pot along with chicken broth, milk, heavy cream, salt, pepper, and ancho chili powder. Stir well.
  7. Bring to a boil and cook until potatoes are tender when pierced with a fork (about 10 minutes).
  8. Reduce heat to simmer and remove approximately half*** of the soup to a blender (be careful, it will be hot!) and puree until smooth (half is about 5 cups of soup, but just eyeballing the amount will be fine. Alternatively you can use an immersion blender.).
  9. Return the pureed soup to the pot and add sour cream and reserved bacon pieces, stir well.
  10. Allow soup to simmer for 15 minutes before serving.
  11. Top with additional sour cream, bacon, cheddar cheese, or chives. 
  12. Enjoy!

NOTES

  • I recommend starting with a more reserved amount of salt and then adding more as needed, the amount of salt needed will vary depending on the type/brand of broth you use
  • If you haven't used ancho chili powder before, I recommend starting with 1/4 teaspoon and then taste-testing before increasing to 1/2 teaspoon if you like the taste.  
  • If you want a completely creamy soup you can puree all of it, just puree in batches, about half of the soup at a time.  I prefer my potato soup with actual chunks of potatoes and prefer to puree just half of it.

  • Cooked Meatballs (your favorite recipe or frozen, pre-made meatballs)
  • Pasta Sauce (homemade or jarred)
  • Shredded Mozzarella Cheese

INSTRUCTIONS

  1. Spray a baking sheet with cooking spray. Preheat oven to 400 degrees F.
  2. Place your frozen cooked meatballs or homemade cooked meatballs in a large pot. Cover with your pasta sauce. Gently fold the meatballs with the sauce, Heat the meatballs and sauce on low-medium, stirring occasionally, until the meatballs are heated thoroughly.
  3. Fill a roll with as many meatballs as you can fit (usually 4-5 meatballs, depends on size of meatballs and the size of the roll). Top with more pasta sauce from your pot. Place filled sandwich rolls closely on baking sheet. Top each sandwich with shredded mozzarella cheese.
  4. Bake until cheese is melted, hot, and bubbly.

  • 1 lb ground beef
  • 1 (24oz) jar of tomato sauce
  • 8 (ounces) cream cheese (cubed)
  • 1-2 cups shredded mozzarella cheese
  • 1/2 cup grated or shredded parmesan
  • seasoning to taste

INSTRUCTIONS

  1. Cook the pasta a la dente according to the package directions; drain and set aside.
  2. Preheat your oven to 350 degrees and grease a 9x13 baking dish.
  3. In a large skillet, brown the ground beef with the seasoning of your choice (I use salt, garlic powder, pepper & Italian seasoning).
  4. Remove the excess grease from the browned beef and then stir in your tomato sauce and cream cheese. Simmer for a few minutes until the sauce is well incorporated.
  5. Gently toss your cooked tortellini in with the sauce mixture and then pour it into your casserole dish; Sprinkle with shredded mozzarella and parmesan.
  6. Bake uncovered in the center rack of your oven for about 20 minutes. Switch the oven to broil and continue baking for an additonal 2-3 minutes or until the cheese starts to brown.
  7. Enjoy with garlic bread, salad and/or veggies!

INGREDIENTS

  • 1 1/2 pounds lean ground beef (or ground turkey)
  • 2/3 cup panko bread crumbs
  • 1/2 cup onion , chopped
  • 1 Tablespoon barbecue sauce
  • 1 Tablespoon mustard
  • 1/2 teaspoon garlic powder
  • 1 1/2 teaspoons chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 egg , lightly beaten
Meatloaf sauce:
  • 1/3 cup light brown sugar
  • 1/2 cup ketchup
  • 2 teaspoon dijon mustard
  • 1/4 teaspoon ground nutmeg

INSTRUCTIONS

  1. Preheat oven to 350 degrees F.
  2. In a large mixing bowl (using your hands or a large spoon), combine ground beef, breadcrumbs, onion, 1 Tbsp barbecue sauce, mustard, chili powder, garlic powder, salt, pepper and egg.
  3. Divide the mixture among the 12 cups in a standard muffin tin, pressing them down to fill the cup. Bake for 15 minutes.
  4. In the meantime, in a small bowl mix together all of the ingredients for the sauce.  
  5. Remove the meatloaf from oven and use a paper towel to soak up any grease on the meatloaf.
  6. Generously spoon sauce over each mini meat loaf. Return to oven for an additional 10-15 minutes or until the meat is cooked through.
  7. Serve with mashed potatoes and any extra sauce.

INGREDIENTS

  • 1 lb ground beef
  • 1/2 onion (chopped)
  • 1 (12oz) bag tortilla chips
  • 1 (28oz) can red enchilada sauce (the big one)
  • 1 cup salsa
  • 1 (32oz) bag Mexican cheese blend (the large bag)

INSTRUCTIONS

  1. In a large skillet, sauté the onion until soft. Add the ground beef and brown (no need to drain the grease). 
  2. Preheat your oven to 350 degrees, and grease a 9x13 baking dish. 
  3. Break up the chips a bit (while still in the bag), and place everything except for 2 large cups of reserved cheese (for topping later) into your baking dish. 
  4. Use your hands to mix everything together until well combined. Make sure the mixture is evenly distributed on the bottom of the pan, and then top with the remaining cheese.
  5. Bake for 45-50 minutes. Top with sour cream, diced tomatoes, avocado, jalapeño, chives or anything else you'd like!

NOTES

  • If it's easier, you can mix everything together in a separate large bowl before adding it to your baking dish. I just don't like the extra dirty dishes. 🙂
  • Don't be afraid to customize this recipe to your own liking. You could use green enchilada sauce instead of red, or add in a few veggies like bell pepper or zucchini to the ground beef.
