INGREDIENTS

  • 4 (5 oz) chicken breasts*, pounded to an even 1/3-inch thickness
  • Salt and freshly ground black pepper
  • 1/3 cup all-purpose flour
  • 1 Tbsp olive oil
  • 4 Tbsp unsalted butter, sliced into 1 Tbsp pieces, divided
  • 1 1/2 tsp minced garlic
  • 1/2 cup low-sodium chicken broth
  • 3 Tbsp fresh lemon juice
  • 1/2 tsp fresh lemon zest
  • 1 1/2 Tbsp minced fresh parsley (optional)

INSTRUCTIONS

  1. Season both sides of chicken with salt and pepper.
  2. Place flour in a shallow dish then dredge both sides of chicken breasts in flour, one at a time.
  3. Heat 12-inch skillet over medium-high heat.
  4. Add olive oil and 1 Tbsp butter, let butter melt, then add in chicken breasts  in a single layer.
  5. Sear until golden brown on bottom, about 4 - 5 minutes then flip and continue to cook until chicken registers 165 degrees in center, about 4 - 5 minutes longer.
  6. Transfer chicken to a plate while leaving any little bit of excess oil in pan.
  7. Reduce to medium heat, add garlic and saute 20 seconds, or until just lightly golden brown, then pour in chicken broth while scraping browned bits up.
  8. Pour in lemon juice then bring mixture to a simmer, reduce heat slightly and let simmer until liquid has reduced by about half, about 2 minutes.
  9. Add in remaining 3 Tbsp butter and lemon zest, stir to melt butter. 
  10. Return chicken to skillet, spoon sauce over chicken and garnish with parsley. Serve warm.

NOTES

  • *2 (10 oz.) chicken breasts may be used instead. 
  • Then simply butterfly and halve the breasts (cut through the thickness of the 2 large breasts), to create 4.

INGREDIENTS

  • 8 boneless skinless chicken breast halves (4 ounces each)
  • 3 teaspoons olive oil, divided
  • 2 tablespoons butter
  • 1/2 cup all-purpose flour
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup egg substitute
  • 1/2 teaspoon salt
  • 2 tablespoons plus 1/4 cup dry white wine or chicken broth, divided
  • 1/4 cup minced fresh parsley
  • 1/8 teaspoon hot pepper sauce
  • 5 tablespoons lemon juice, divided
  • 3 garlic cloves, minced

INSTRUCTIONS

  1. Flatten chicken to 1/4-in. thickness. In a shallow dish, combine the egg substitute, 2 tablespoons wine, 2 tablespoons lemon juice, garlic, and hot pepper sauce. In an another shallow dish, combine the flour, Parmesan cheese, parsley, and salt. Coat chicken with flour mixture, dip in egg substitute mixture, then coat again with flour mixture.
  2. In a large nonstick skillet, brown four chicken breast halves in 1-1/2 teaspoons oil for 3-5 minutes on each side or until juices run clear. Remove and keep warm. Drain drippings. Repeat with remaining chicken and oil. Remove and keep warm.
  3. In the same pan, melt butter. Add the remaining wine and lemon juice. Bring to a boil. Boil, uncovered, until sauce is reduced by a fourth. Drizzle over chicken.

INGREDIENTS

  • 4 boneless chicken breasts, about 6 ounces each
  • 4 ounces cream cheese, room temperature
  • ½ cup grated cheddar cheese
  • 1 packet ranch seasoning
  • 1/2 cup buffalo sauce
  • 1 tablespoon fresh parsley
  • Ranch or blue cheese dressing, for serving

INSTRUCTIONS

  1. Preheat oven to 375 degrees. Spray a 9x13 baking dish with non-stick spray.
  2. Place the chicken breasts on a cutting board and use a sharp knife to cut a pocket into the side of each breast, being careful not to cut all the way through. Set chicken aside.
  3. Add the cream cheese, cheddar, and ranch seasoning to a small bowl and stir well to combine.
  4. Spoon the cream cheese mixture evenly into piece of chicken.
  5. Place the chicken in the prepared baking dish and brush heavily with the buffalo sauce.
  6. Bake for 25-35 minutes, brushing with additional sauce every ten minutes, until chicken reaches 165 degrees.
  7. Sprinkle with freshly chopped parsley and drizzle with ranch or blue cheese dressing before serving.

NOTES

  • Blue cheese crumbles may be swapped for the cheddar.
  • To reduce sodium, use a homemade ranch seasoning or a reduced sodium wing sauce.

INGREDIENTS

Chicken and Mushrooms:
  • 2 Tbsp olive oil
  • 4 boneless skinless chicken thighs (thinly sliced)
  • 10 oz mushrooms (1 package)
  • Salt and pepper to taste
Creamy Parmesan Sauce:
  • 4 Tbsp butter
  • 4 cloves garlic minced
  • 1 Tbsp flour
  • 1/2 cup chicken broth
  • 1 cup half and half
  • 1/2 cup grated Parmesan cheese
  • 1/2 Tsp salt
  • 1 cup spinach

INSTRUCTIONS

  1. Chicken and mushrooms: In a large skillet, add olive oil and heat it over medium high heat. When the pan is hot, add chicken and cook for about 5 minutes on each side until browned. Season chicken with salt and pepper right inside the pan. Remove it onto a plate and add the sliced mushrooms in. Add in salt. In about 5 more minutes, your mushrooms should look nice and moist, and dark. Once cooked, remove them from the pan. I put them on the same plate as the cooked chicken strips.
  2. Sauce: To make the sauce, add butter to the pan, allow it to melt and then cook garlic in it until slightly browned – only for a couple of minutes. Add 1 tablespoon flour (omit flour if you like your sauce to be a little more runny).  Slowly add chicken broth, half-and-half and Parmesan cheese. All these will blend in very quickly. 
  3. Add salt slowly and taste the sauce to make sure the salt level is to your liking.
  4. Spinach: Add spinach to the sauce and allow it to wilt. I added 1 cup of spinach, but you can certainly add more or less depending on your preference.
  5. Putting it all together: Add the chicken and mushrooms back into the pan and mix in well. Serve warm and garnish it with parsley, if desired.
  6. Eat as is, or serve along pasta or rice.

INGREDIENTS

  • 2 Chicken Breasts
  • 1/2 cup All Purpose Flour
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp pepper
  • 1 TBSP Olive Oil
  • 4 Cups Broccoli Florets, steamed
  • 1 lb Orrecheitte Pasta or Rotini Pasta
For Sauce:
  • 3/4 cup butter, salted
  • 2 Garlic Cloves, Minced
  • 4 TBSP flour
  • 2 cups Heavy Cream
  • 3 cup freshly grated Parmesan cheese
  • 1/2 tsp pepper
  • 1/8 tsp salt

INSTRUCTIONS

  1. Cook pasta according to directions on package.  
  2. Drain and set aside.
For Chicken:
  1. In a large pan, heat olive oil over medium high heat.
  2. On a large plate mix together flour, salt, garlic powder and pepper.  Dredge chicken breasts in flour mixture and shake off excess.
  3. Place in hot oil and cook for 3-4 minutes on each side or until chicken is cooked through.
  4. Remove from pan and place on a clean plate to rest.
For Sauce:
  1. In a medium sauce pan, heat butter over medium high heat.
  2. Add in garlic and saute for 30 seconds.
  3. Stir in flour and cook for 1 minute, stirring constantly.
  4. Pour in heavy cream, Parmesan cheese, salt and pepper.  Turn heat down to low and stir until cheese is melted and everything is heated through.  Taste for seasoning.

INGREDIENTS

  • 2  large white onions, sliced
  • 1/4 cup  (1/2 stick) salted butter
  • 1 14 oz can beef broth
  • 3-4 chicken breasts, pounded
  • 2 tbsp olive oil
  • 1 1/2 tsp salt
  • 1 tsp ground black pepper
  • 1 tsp fresh thyme
  • 1 1/2 tbsp all-purpose flour
  • 3-4 slices deli-style provolone cheese (depending on how many chicken breasts)
  • 3-4 slices deli-style swiss cheese (depending on how many chicken breasts)
  • parsley, for garnish

INSTRUCTIONS

  1. Melt butter in an oven-safe skillet over medium high heat. Add onions and stir while cooking, for about 15 minutes until softened
  2. Remove from skillet and set aside.
  3. Season chicken breasts with olive oil, salt, pepper, and fresh thyme. Cook chicken in skillet for about 5 minutes on each side. Move chicken to a plate and cover with a paper towel.
  4. Return onions to skillet and sprinkle with flour. Stir and cook for about 1 minute before pouring in beef broth. Whisk until thickened
  5. Add chicken back to skillet and spoon sauce over the chicken.
  6. Turn oven on to 350 degrees
  7. Top with one slice of provolone and one slice of swiss for each breast.
  8. Move to a 350 degree oven and bake until cheese is melted and chicken is cooked through, about 8 to 10 minutes
  9. Remove from oven and spoon more of the sauce over the chicken. Top with parsley and serve hot.

INGREDIENTS

  • 2 boneless skinless chicken breast cooked & shredded
  • 1 cup Monterey Jack Cheese shredded
  • 4 oz. mild chiles diced
  • 1/2 teaspoon ground cumin
  • salt and pepper to taste
  • 1 cup Mexican White Sauce more for serving
  • 6 flour tortillas
  • butter for brushing
  • salsa for serving

INSTRUCTIONS

  1. Preheat the oven to 400F.
  2. Bring large saucepan filled half way with water to a boil, add chicken breast and cook on medium heat until it is cooked thru and chicken is no longer pink inside. Drain the water and let it cool. Using hands or two forks tear the chicken into small pieces.
  3. Warm tortillas on top of the stove for few seconds, it will make them soft and flexible.
  4. In a mixing bowl combine chicken, ground cumin, cheese, chillies, Mexican White Sauce, salt and pepper. Give it a good mix.
  5. Place 1/2 cup of the chicken mixture on center of each tortilla. Fold the sides, then the bottom side up, to cover the filling, roll over to create chimichangas.
  6. Brush each chimichangas with butter and bake for 15-20 minutes or until golden color. Serve with leftover Mexican White Sauce, Guacamole or cabbage salad.

INGREDIENTS

  • 8 ounces uncooked pasta* (I used whole-wheat rotini)
  • 1 large head of broccoli*, cut into bite-sized florets (about 1 pound of florets)
  • 2 tablespoons butter or olive oil
  • 1 small white onion, thinly sliced
  • 8 ounces baby bella (cremini) mushrooms, thinly sliced
  • 4 cloves garlic, minced
  • 3 tablespoons flour
  • 1 cup chicken or vegetable stock
  • 1 1/2 cups milk
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon freshly-cracked black pepper
  • 2 cups (8 ounces) shredded sharp cheddar cheese, divided
  • 2 cups diced (or shredded) cooked chicken

INSTRUCTIONS

  1. Heat oven to 400°F.
  2. Cook pasta in a large stockpot of generously-salted boiling water until it is al dente.  However, about 1 minute before the pasta is done, add the broccoli to the boiling pasta water and stir until combined.  Drain both the pasta and broccoli, and set aside.
  3. Meanwhile, heat the butter (or oil) in a large sauté pan over medium-high heat.  Add the onion and sauté for 3 minutes, stirring occasionally.  Add the mushrooms and garlic and sauté for 5 more minutes, stirring occasionally, or until the mushrooms are cooked through.
  4. Sprinkle the flour evenly over the onion mixture and stir until combined.  Cook for 1 minute, stirring occasionally.  Add in the stock, and stir everything together until most of the clumps are gone.  Add in the milk, Dijon, salt and pepper and stir until combined.  Continue cooking the sauce until it reaches a simmer.  Then remove from heat and stir in 1 cup of the shredded cheese until it is combined.  Taste and season with additional salt and pepper, if needed.
  5. In a large 9 x 13-inch baking dish, combine the cooked pasta, broccoli, mushroom sauce and chicken.  Toss until combined.  Smooth the casserole out into an even layer.
  6. Bake uncovered for 15 minutes.  Then remove pan from the oven, sprinkle the remaining cheddar cheese evenly on top of the casserole, and bake for 10 more minutes or until the cheese is nice and melty.
  7. Serve warm, garnished with extra black pepper and/or fresh herbs, if desired.

NOTES

  • Pasta: Any type of pasta will work here — traditional (semolina), whole-wheat, egg, gluten-free, or alternative-grain pasta.
  • Broccoli: Feel free to use 1 pound of frozen broccoli florets (thawed) in place of fresh broccoli if you prefer.

INGREDIENTS

  • 2 lbs boneless, skinless chicken breasts thinly cut or pounded
  • 6 oz cream cheese softened
  • 1/4 cup mayonnaise
  • 1/2 cup crispy bacon crumbled (about 8 slices)
  • 1/2 cup green onions chopped (about 4 onions)
  • 1.5 cups colby jack cheese shredded
Garnish
  • crumbled bacon
  • green onions

INSTRUCTIONS

  1. 1. Preheat the oven to 350˚F
  2. In a medium sized bowl, mix cream cheese, mayo, bacon crumbles, green onion and half of the cheddar cheese together until combined.
  3. Place the chicken breast in a baking dish and spread the cheese mixture over the chicken. Top with remaining cheddar cheese.
  4. Bake for 30-40 minutes or until chicken is cooked through (165˚F internal temperature)
  5. Garnish with additional bacon and green onions and serve hot!

  • 1/3-1/2 cup smooth peanut butter
  • 12-15 skewers
Marinade/Sauce
  • 1/4 cup low sodium soy sauce
  • 1/4 cup packed brown sugar
  • 1 tablespoon chili paste (like Sambal Oelek)
  • 1 1/2 tablespoons lime juice
  • 1 1/2 tablespoons fish sauce
  • 1 teaspoon dried basil
  • 1 teaspoon coriander powder
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon turmeric powder

INSTRUCTIONS

  1. Whisk together the Marinade/Sauce ingredients in a medium bowl. Remove 1/3 cup to a freezer size bag and whisk in 3 tablespoons olive oil. Add chicken and toss to evenly coat. Marinate in the refrigerator 6 hours up to overnight. Refrigerate remaining marinade/sauce separately - this will become the base of your Peanut Sauce.
  2. When ready to cook, soak wooden skewers in water for at least 30 minutes. Meanwhile, remove chicken from refrigerator to bring to room temperature. Thread chicken onto skewers and lightly dab excess marinade off with paper towels.
  3. OVEN: Preheat oven to 350 degrees F. Line two baking sheets with foil and lightly spray with nonstick cooking spray. Evenly divide chicken between baking sheets. Bake 15-20 minutes OR until chicken is cooked through being careful not to overcook or chicken will not be as tender (internal temp of 165 degrees F).
  4. GRILL: Grease an indoor or outdoor grill and heat to high heat. Once hot, add chicken, reduce heat to medium, cover and grill chicken 3-4 minutes per side, or until chicken is cooked through (internal temp of 165 degrees F).
  5. SKILLET: Heat 1 1/2 tablespoons olive oil in a large non-stick skillet over medium high heat. Working in batches, add skewers and cook for 2-3 minutes per side until cooked through (internal temp of 165 degrees F).
  6. Add reserved Sauce to a small saucepan along with 1/4 cup coconut milk OR 3 tablespoons water. Bring to a boil then simmer for 1 minute. Remove from heat then stir in 1/3 cup peanut butter until completely combined then add additional peanut butter if desired for a thicker/more nutty sauce OR water or coconut milk 1 tablespoon at a time for a thinner sauce. Taste and add additional chili sauce if desired for a spicier sauce.
  7. Serve chicken warm with Peanut Sauce for an appetizer or also serve with rice/veggies for a main course.

NOTES

  • Soak the wooden skewers before grilling them or else they will catch on fire. I start soaking before doing anything else, then they can be soaking while the chicken is marinating – and you don’t have to worry about it last minute. When ready to use, just thread the chicken on, no need to dry them first.
  • I find it easiest to cut each chicken breast in half horizontally to create chicken fillets, then slice into strips.
  • The difference between great and FABULOUS results with this Chicken Satay recipe is the marinating time. I would not marinate the chicken less than 6 hours. Try and plan for the full 24 hours if possible because the longer you marinate the chicken, the more flavorful and juicy it will become.
  • Remove the chicken from refrigerator at least 30 minutes before cooking to bring to room temperature. This helps the chicken to cook more evenly.
  • The Peanut Satay Satay has a peanut butter range of 1/3-1/2 cup. I find this is necessary due to readers’ personal preference and which peanut butter is used. I personally like the full ½ cup peanut butter and thin with additional coconut milk, but it is up to you!
  • You can use water or coconut milk in the Peanut Satay Sauce. It is only 2 tablespoons, plus more as needed, so it won’t have a huge impact on flavor.
  • As mentioned, you need to adjust the consistency of the Peanut Sauce with either additional peanut butter or coconut milk/water. It should be thick but pourable.
  • If you have extra peanut sauce, you can thin it out and toss it with noodles, or serve it over rice or with vegetables. You can also use it as a salad dressing!
  • Looking for a fun presentation? Dress up the platter with chopped cilantro, basil leaves, crushed peanuts and a swirl of Sriracha in the dipping bowl.
HOW TO PREP IN ADVANCE
  • Marinade: whisk the marinade ingredients and store in an airtight container up to 5 days in advance. This chicken loves to marinate so you can have satay bathing in the refrigerator for a 24 hours before you cook it.
  • Peanut Satay Sauce: The peanut sauce will keep in the fridge for up to 1 week stored in an airtight container. It can be reheated in the microwave or over low heat on the stove top. If the sauce gets too thick, whisk in water or coconut milk until the desired consistency is achieved.
HOW TO FREEZE
  • Marinade: Whisk together, add to a freezer bag, label and freeze for up to 3 months.
  • Chicken Satay: After you have cooked the Satay you can remove the skewers or not, I prefer to remove them so I can get more Satay to a container. Let the chicken cool completely before storing in airtight freezer container. Can be frozen for 2 to 3 months.
  • Peanut satay sauce: The peanut sauce freezes well, so I usually make a double or triple batch and freeze leftover sauce in 1-cup portions for use in making a fast meal in the future. The sauce can be defrosted by moving it from the freezer to the fridge the day before you need it.

INGREDIENTS

  • 1 1/2 cups water
  • 2 packets chicken gravy mix
  • 1 1/4 cup Condensed Chicken Soup
  • 1 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon paprika
  • 1/4 teaspoon coarse ground black pepper
  • 3 whole chicken breasts , boneless skinless (about a pound)
  • 1/2 cup sour cream

INSTRUCTIONS

  1. Season chicken breasts with garlic powder, black pepper and salt.
  2. In slow cooker, whisk together the water, gravy packets, condensed chicken soup, garlic powder, salt, paprika and pepper until smooth
  3. Add the chicken breasts to the slow cooker and flip on both sides to coat well.
  4. Cover and cook on low for 4-5 hours.
  5. When done, carefully remove chicken, shred or cut as desired.
  6. Whisk the sour cream into the slow cooker until smooth and serve over chicken.

INGREDIENTS

  • 2 lbs boneless skinless chicken breast
  • 1 cup canned black beans rinsed and drained 
  • 1 cup corn see note
  • 1 can diced green chiles
  • 1/2 red bell pepper diced
  • 1/4 cup chopped cilantro
  • 1 cup colby jack cheese shredded
  • 1/2 tsp garlic powder
  • 1/4 tsp cumin
  • 1/4 tsp salt
  • 1/4 tsp pepper

INSTRUCTIONS

  1.  Mix the garlic powder, cumin, salt and pepper and set aside.
  2. Combine the corn, black beans, green chiles, red bell pepper, and chopped cilantro and mix well.
  3. In a large casserole dish, lay the chicken breast flat in the baking dish.  Sprinkle with seasonings, then spread the corn mixture evenly over it. Add cheese to top it off.
  4. Bake uncovered at 375˚F for 40-50 minutes or until the chicken has an internal temperature of 160˚F. If the cheese starts to get too brown for your liking, loosely cover with foil for the remainder of the cook time.
  5. Serve warm and enjoy!

NOTES

  • You can cut the chicken in half, chunks, or use chicken tenderloins in lieu of full chicken breasts to make serving easier. You can also use different cuts of boneless, skinless chicken such as thighs or wings however if the cut of meat is changed, cooking time may be varied.
  • Fresh cooked corn, thawed frozen corn, or drained canned corn can be used in this recipe.
  • Leftovers can be stored in an airtight container for 3-4 days in the refrigerator or in the freezer for up to a month.

  • 1 lb boneless skinless chicken breasts, cut into 1 inch pieces
  • 4 cloves garlic minced
  • 1/4 cup low sodium chicken broth or water
  • 1/4 cup soy sauce
  • 3 tablespoons honey
  • 2 teaspoons cornstarch
  • salt and pepper to taste

INSTRUCTIONS

  1. Heat 1 teaspoon of oil in a large pan over medium heat. 
  2. Add the broccoli and carrots and cook for approximately 4 minutes or until vegetables are tender.
  3. Remove the vegetables from the pan; place them on a plate and cover.
  4. Wipe the pan clean with a paper towel and turn the heat to high. 
  5. Add the remaining tablespoon of oil.
  6. Season the chicken pieces with salt and pepper and add them to the pan in a single layer - you may need to do this step in batches. Cook for 3-4 minutes on each side until golden brown and cooked through.
  7. Add the garlic to the pan and cook for 30 seconds.
  8. Add the vegetables back to the pan and cook for 2 more minutes or until the vegetables are warmed through.
  9. In a bowl whisk together the chicken broth, honey and soy sauce. 
  10. In a small bowl mix the cornstarch with a tablespoon of cold water.
  11. Pour the soy sauce mixture over the chicken and vegetables; cook for 30 seconds. 
  12. Add the cornstarch and bring to a boil; cook for 1 more minute or until sauce has just started to thicken.
  13. Serve immediately, with rice if desired.

INGREDIENTS

  • 4 tablespoons avocado oil divided
  • 12 tablespoons soy sauce divided
  • 3 teaspoons sesame oil divided
  • 6 tablespoons butter divided
  • salt

Fried Rice
  • 1/2 cup white onion diced
  • 1 cup frozen vegetables
  • 2 eggs large
  • 4 cups rice cooked, cool to the touch
Hibachi chicken
  • 1 pound chicken breast cut into bite-sized pieces
  • 2 teaspoons lemon juice fresh
Hibachi vegetables
  • 1 zucchini large, quartered
  • 1 white onion large, halved and cut into 1/2" pieces
  • 2 cups baby bella mushrooms quartered, about 8 ounces
Mustard sauce
  • 1 tablespoon sesame seeds preferably lightly toasted
  • 1 clove garlic minced
  • 2 tablespoons dry mustard
  • 2 teaspoons honey
  • 1/2 cup half and half
  • 1 tablespoon water hot

INSTRUCTIONS

  1. Make the fried rice: Heat 2 tablespoons avocado oil on medium high in a large skillet or wok. Add diced onion and frozen vegetables, and sauté until onions are almost translucent, about 3 minutes. Move the vegetables to the side of pan.
  2. Crack eggs into pan and scramble with a spatula until cooked through and fully scrambled. Add 4 cups cooked rice and 4 tablespoons butter. Cook for 5 minutes and stir frequently. Add 4 tablespoons soy sauce and cook 1 additional minute. Pack fried rice firmly into bowls to keep hot.
  3. Make the chicken and vegetables at the same time.
  4. For the chicken: Heat 1 1/2 teaspoons sesame oil and 1 tablespoon avocado oil in same skillet or wok used for fried rice. Add chicken, 3 tablespoons soy sauce, 1 tablespoon butter, lemon juice, salt, and pepper to skillet. Cook chicken until it is no longer pink, about 5-7 minutes. Stir only once or twice so chicken will brown.
  5. For the vegetables: In a separate large skillet or wok, heat 1 1/2 teaspoons sesame oil and 1 tablespoon avocado oil on medium high heat. Add sliced onion, baby bella mushrooms, zucchini, 1 tablespoon butter, salt, and pepper to skillet. Sauté until vegetables are tender, about 6-8 minutes.
  6. For the mustard sauce: Lightly toast sesame seeds if desired. (See note.) Blend sesame seeds, dry mustard, 2 teaspoons honey, half and half, hot water, 1/4 cup soy sauce, and minced garlic in blender.

NOTES

  • For the best fried rice: Do not cook rice immediately before making fried rice. Leftover or precooked rice from the store works best.
  • For mustard sauce: Lightly toasting sesame seeds will enhance the flavor, but it is not necessary. Mustard sauce can be made ahead of time and stored in the refrigerator.
  • To make grain-free: Substitute rice with cauliflower rice.

INGREDIENTS

  • 4 boneless, skinless chicken breasts trimmed of excess fat
  • 1 cup mayonnaise (or Greek yogurt for a healthier option)
  • 1 cup parmesan cheese (or sharp Cheddar, or Asiago) divided
  • 1 tsp seasoning salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder

INSTRUCTIONS

  1. Cut each chicken breast into 3 large chunks or strips. Place chicken breast strips/chunks in a bowl of milk/buttermilk. Let it soak for 20 -30 min or overnight.
  2. Preheat oven to 375 F. In a small bowl, combine the mayonnaise, 1/2 cup of parmesan cheese and seasonings.
  3. Place chicken into a 9x13 baking dish and spread the mixture evenly on top of the chicken breasts, and sprinkle with remain parmesan.
  4. Bake for about 40-45 minutes, or until cooked through. You can also finish them off under the broiler for a minute or two to get them extra browned on top.
  5. Serve with a veggie like these delicious fresh broccoli that I steamed. Season with a dash of fresh parsley, if desired.

INGREDIENTS

  • 12 ounces penne pasta cooked in salted water according to package directions
  • 3 cups diced cooked chicken
  • 3 tablespoons butter
  • 2 tablespoons flour
  • 1 teaspoon minced garlic
  • 2 cups whole milk
  • 1 cup heavy cream
  • 3/4 cup grated parmesan cheese
  • 2 cups shredded mozzarella cheese divided use
  • salt and pepper to taste
  • cooking spray
  • 1 tablespoon parsley chopped

INSTRUCTIONS

  1. Preheat the oven to 375 degrees. Coat a 3 quart baking dish with cooking spray.
  2. Melt the butter in a large pan over medium heat. Add the garlic and cook for 30 seconds. Whisk in the flour and cook for 1 minute.
  3. Pour in the milk and cream, then simmer, whisking constantly, until sauce has just thickened. 
  4. Add the parmesan cheese and 1/2 cup shredded mozzarella to the milk mixture, along with salt and pepper to taste.
  5. Stir until cheese has melted.
  6. Place the pasta and chicken in a large bowl. Pour the sauce over the top, and toss to coat evenly.
  7. Pour the pasta mixture into the prepared pan, and top with remaining mozzarella cheese.
  8. Bake, uncovered, for 20 minutes or until pasta is bubbly and cheese has just started to brown.
  9. Sprinkle parsley over the top, then serve.
