INGREDIENTS

  • 1 1/2 cups (380g) ripe and mashed banana (3-4 medium bananas), measured
  • 1/2 cup (100g) packed light brown sugar
  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (110g) unsalted butter, melted
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup (130g) 2% Greek yogurt (sour cream also works)
  • 1 1/3 cups (180g) all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt

INSTRUCTIONS

  1. Preheat your oven to 325F and grease and line a 9×5 loaf pan with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a separate bowl, mix together the melted butter and sugars until you reach a paste-like consistency. This may take some vigorous whisking for a minute or two. You can either use a whisk or an electric mixer with the paddle attachment.
  4. Add in your mashed bananas followed by the eggs, yogurt, and vanilla.
  5. Once all of your wet ingredients are mixed together, fold in the dry ingredients. Then, fold in the chocolate chips.
  6. Pour the batter into your prepared loaf pan and spread it even. Sprinkle extra chocolate chips on top if you like.
  7. Bake for 1 hour to 1 hour 15 minutes or until a toothpick comes out with a few moist crumbs. Let it cool completely before removing from the pan. Store at room temperature in an air-tight container.

INGREDIENTS

  • 1 cup butter softened
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 cups rolled oats
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3 medium ripe bananas mashed
  • 1 cup semisweet chocolate chips

INSTRUCTIONS

  1. Preheat oven to 375 degrees. Line a baking sheet with parchment or spray with nonstick spray.
  2. In the bowl of your mixer cream together the butter and sugars until light and fluffy.
  3. Beat in the eggs and vanilla.
  4. In a separate bowl stir together the flour, oatmeal, baking soda, cinnamon, and salt.
  5. Add the dry ingredients to the butter and sugar and beat until just combined.
  6. Mix in the mashed bananas and chocolate chips until well incorporated.
  7. Use a large cookie scoop to drop scoops of cookie dough onto the prepared baking sheet. Bake for 12 minutes or until the edges are browned and cookies are set.
  8. Cool on a wire rack.

NOTES

  • Swap in walnuts or pecans for the chocolate chips, if you prefer.

INGREDIENTS

  • 1 stick unsalted butter, , room temperature (1/2 cup)
  • 1 cup brown sugar, , packed
  • 1 large egg
  • 3-4 very ripe bananas, , mashed (frozen bananas are BEST; they're extra sweet)
  • 1 teaspoon vanilla
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup dark chocolate chips

INSTRUCTIONS

  1. Preheat oven to 350 degrees F.
  2. Line a 9x5 loaf pan with parchment paper, making sure the parchment is hanging over the sides of the loaf pan. This will help you easily remove the loaf after baking. Spray with nonstick spray and set aside.
  3. In a large bowl, cream butter and sugar together for about 2 minutes until smooth. Whisk in the egg then add the mashed bananas and vanilla. Mix, scraping down the sides of the bowl, until well combined.
  4. Add the flour, baking soda, baking powder, and salt. Mix until just combined. Careful not to over mix. Fold in the chocolate chips.
  5. Pour the mixture into the loaf pan. Bake for 55-65 minutes until a knife inserted in the center of the loaf comes out clean. Let cool for at least 30 minutes before serving. Enjoy!

NOTES

  • This recipe makes 1 loaf, about 12 slices, depending on how thick/thin you cut the slices.

INGREDIENTS

  • 3/4 cup unsalted butter (at room temperature)
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 1/3 tablespoons milk
  • 3 ripened bananas
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/2 bag chocolate chips (totally your preference on how much you like)

INSTRUCTIONS

  1. Preheat oven to 350 degrees
  2. In a large bowl, combine the sugar and the butter.  Use a mixer on low until combined.  
  3. Add eggs and blend.  
  4. Add milk and the bananas and mix for about 1 minute. The batter may look at little lumpy - that's ok! 
  5. Add the flour and the baking soda and mix until blended. Fold in the chocolate chips.
  6. Spray 2 loaf pans with non-cook spray and divide the batter. Pour the batter into the two pans.
  7. Bake for 45 minutes (mine took a little longer, but my ovens are not so great).  You should be able to take a knife or a toothpick inserted into the middle of the loaf and the they should come out clean.
  8. Remove from the oven and let cool on a wire rack for about 30 - 45 minutes.  Remove from pan and serve 
  9. (I serve one and freeze one... wrap in plastic wrap and then with tin foil and freeze)

INGREDIENTS

  • 3-4 medium, overripe bananas
  • 3/4 cup sugar
  • 1egg
  • 1teaspoon vanilla
  • 1/4 c. vegetable oil
  • 1/2 cups All Purpose flour
  • 1/4 tsp baking powder
  • 1/2 tsp. baking soda
  • dash of ground cinnamon
  • 1/8 tsp salt
  • 1 cup chocolate chips + additional for topping

INSTRUCTIONS

  1. Preheat the oven to 350ºF. Prepare a 9x5 baking pan by lining it with parchment or foil and lightly spraying with nonstick spray.
  2. Mash the bananas with a fork or whisk. Whisk in the sugar, egg, vanilla, and vegetable oil.
  3. Mix in the flour, baking powder, baking soda, cinnamon, and salt. The batter will be lumpy.
  4. Fold in the chocolate chips.
  5. Pour the batter into the prepared baking pan (top with more chocolate chips if you want). Bake for 55-60 minutes (start checking for doneness with a toothpick at 55 minutes). Let cool.

  • 1/2 Cup Butter, Melted
  • 1/2 Cup Sour Cream
  • 2 Large Eggs
  • 1 Cup Granulated Suar
  • 1 Teaspoons Vanilla Extract

INSTRUCTIONS

  1. Preheat oven to 350 degrees. Prepare a 9x5 inch loaf pan with butter and flour, or spray with non stick cooking spray that has flour added.
  2. In a large bowl mash the bananas until smooth. Str in the melted butter and sour cream. Stir in the eggs, sugar, and vanilla extract.
  3. Stir in the baking soda, salt, and flour until just combined.  Fold in the chocolate chips.
  4. Pour batter into the prepared pan.  Bake for 50-60 minutes, until a toothpick inserted in the center comes out clean.

  • 2 to 3 very ripe bananas, peeled
  • 1/3 cup (74g) melted unsalted butter
  • 1/2 cup milk, (whole, 2 percent or even a nut milk works)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup (200g) sugar
  • 1/2 cup (113g) creamy peanut butter
  • 1 teaspoon baking soda
  • Pinch of kosher salt
  • 1/2 teaspoon cinnamon (optional)
  • 1 1/2 cups (191g) all-purpose flour
  • 3/4 cup (143g) chocolate chips

INSTRUCTIONS

  1. Preheat the oven to 350°F. Spray or grease a 4x8-inch loaf pan very well.
  2. Make the batter: Mash the bananas in a mixing bowl using a fork. Whisk in the melted butter, milk, egg, and vanilla. Mix in the sugar.
  3. In another mixing bowl, using the hand mixer (or a whisk), beat peanut butter until smooth. Beat this into the banana mixture.
  4. Scrape the bowl down and beat in the baking soda, salt, cinnamon, and flour. Fold in the flour until completely combined, followed by the chocolate chips.
  5. Bake the loaf: Spread the batter in the prepared pan and bake on the center rack of the oven for 55 to 60 minutes, or until the bread is deeply golden and a toothpick inserted in the center comes out clean.
  6. Cool the loaf: Remove the bread from the oven and place on a rack to cool completely before turning out.
  7. Enjoy! Store the leftover bread wrapped well in plastic at room temperature for 3 days. Leftovers are great toasted lightly in a pan with butter.

INGREDIENTS

  • 2 bananas, overripe
  • 3 tbsp melted butter
  • 1 cup granulated sugar
  • 1 egg
  • 2 cups all-purpose flour
  • 3 tsp baking powder
  • 1/2 cup cocoa
  • 1/2 tsp salt
  • 3/4 cup milk
  • 3/4 cup chocolate chips (I like milk!), divided

INSTRUCTIONS

  1. Preheat the oven to 375°.
  2. Using either a handheld electric mixer or a stand mixer, mash the bananas in a large bowl until completely smooth.
  3. Add in the melted butter, sugar and egg. Mix until thoroughly combined.
  4. Slowly mix in the flour, baking powder, cocoa and salt. The batter will be extremely thick at this stage.
  5. Slowly mix in the milk until the batter is smooth and velvety.
  6. Fold in 1/2 cup of chocolate chips.
  7. Pour into a greased 9×5 loaf pan.
  8. Sprinkle the remaining 1/4 cup of chocolate chips on top.
  9. Bake at 375° for 45 minutes.
  10. Cool slightly before slicing.

NOTES

  • If your pans are smaller, you’ll be able to make 2 loaves with this recipe! Smaller loaves mean less cook time, I would try for 20 minutes and then check on them ever 5 minutes or so until a toothpick comes out mostly clean.

INGREDIENTS

  • 2 cups almond flour (made from blanched almonds, not almond meal)
  • 1/4 cup tapioca flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 3 small extra ripe bananas, equal to 1 cup mashed/pureed
  • 3 TBS coconut sugar (or sub other dry sweetener; optional –see notes)
  • 2 large eggs
  • 2 TBS avocado oil (or olive)
  • 1 tsp vanilla
  • 1/3 cup mini chocolate chips, plus more for topping
  • 1/4 cup chocolate chunks for topping

INSTRUCTIONS

  1. Preheat oven to 350ºF and line a 8×4 medium loaf pan with parchment paper; set aside.
  2. In medium bowl add almond flour, tapioca flour, baking soda and salt.
  3. In large bowl whisk together mashed banana and sugar (if using). Then whisk in eggs, oil and vanilla extract until smooth.
  4. Pour dry ingredients into large bowl of wet ingredients, using spatula to stir. Then fold in chocolate chips.
  5. Pour batter into prepared loaf pan, topping with more chocolate chips and chocolate chunks.
  6. Bake banana bread for 20 minutes uncovered, then add foil for the last 15-20 minutes of baking to prevent the top from browning too quickly. My bread took roughly 40 minutes but check the middle for done-ness with toothpick after 35 minutes just to be sure.
  7. Allow bread to cool in pan for 15 minutes before lifting from the parchment paper to remove bread. Slice into 10 slices and ENJOY!

NOTES

  • Option to omit sugar for less sweet bread. I suggest using super ripe bananas if leaving out granulated sweetener. Use coconut sugar for paleo or dry granulated sweetener of choice I did not test this recipe with other flours, see links in post for suggestions.
  • Tapioca Flour – if you don’t have tapioca flour, use 2.5 tablespoons coconut flour in its place. You can also use 1/4 cup arrowroot powder or 1:1 gluten free baking flour if not strictly grain-free.
